select several non-consecutive words

Why can't I select multiple consecutive words with Pages, Keynote, Numbers and Safari with the command key?

I was confused by this very issue due to old references (from 2010) about: "Select Sections of Non-Contiguous Text in Mac OS X with the Command key", complete with a YouTube video demonstrating this with TextEdit.

I don't know if this is rubbish or an old feature - but I don't recall this being a feature since the days of my PowerBook. I would use Microsoft Word, and later LibreOffice Writer - as you commented.

osxdaily is not a reference I commonly use but I thought it was fairly mainstream.

These days I use the advanced features of Find & Replace - I ditched Office and LibreOffice will be done with the next iMac Pro - if it EVER gets made (1st world problem).
