Red Hair on People Emojis

When selecting a person emoji, red hair is not an option. Why is that?

There are 3 emojis with red hair where you can change skin tone, but for all other person emojis, you can select hair color and skin tone, yet red hair is never an option.

Cant select other skin colors on emojis I can’t select other skin colors on any emojis other than the defult yellow. Such as these 🙂😘🙃. You should be able to tap and hold down on the emoji and different colors should appear, but only the default shows up. Any way to fix this?

Handshake emoji I realize that the handshake emoji does not offer an option to change color, but I would like to know why?
