Setting up 2 External Monitors
I want to hook up my Macbook Pro M1 to 2 external monitors; I purchased a USB-C docking station but the 2 external monitors keep mirroring one another. How can I make this work?

I have tried that, when I hook everything up to the docking hub and go to displays, it does not acknowledge the 2nd monitor, only 1 of them and the MacBook. The two external monitors mirror one another. It does not recognize the 2nd in order to un-mirror :(
Mac only supports two [unique] displays on one cable when that cable is a genuine Thunderbolt cable, going out to a genuine Thunderbolt device.

I know but thanks anyway. The M1 Mac does not support multiple external displays. Yes there are workarounds but the M1 still does not support multiple external displays. Using workarounds does not result in satisfactory/quality results.
BobTheFisherman is correct. I was focused on getting the cabling straight to stop your mirroring issue, and missed that we were talking about the 13-in M1 MacBook Pro.
That model is very capable, but supports only ONE Hardware-Accelerated display. That display can be as large as the Apple 6K display XDR.
The specifications for the M1 Mac state that only 1 external display is supported. To use more than 1 external disply you would have to have an Intel, M1 Pro, or M1 Max chip computer.
Apple menu -> System Preferences -> Displays. Untoggle Mirror checkmark.

Used on what I could find, It looks like you can have one more display supported if you also connect the Host-2 USB-C to the computer as well as Host-1 USB-C.
