The Size preview checkbox in -finder/view/show view options/ disappeared.
I installed the Monterrey 12.1 and the file dimensions in px of pictures and videos doesn't appears.

I can not quite sort out how you are opening these menus and where(?)
If I highlight a image from the Finder>Pictures> "my_image" Command J opens
If these are images on the Desktop... Command J and select show Item info. This has been a little flacky for many macOS now, and you may have to toggle the option to have the size re=appear on the Desktop again...
You can try a different View option from the Finder tool bar and compare your results:
