I want to keep my mails on hotmail and gmail server while deleting on iPhone or MAIL on Mac

Earlier emails from hotmail or gmail used to get downloaded on my iPhone or Mac Book Pro and irrespective of what I used to do with those emails on iPhone/Mac Book a copy used to be always there on the server. it has stopped happening since 2020.

No change on POP / IMAP settings is enabling me to retain this on server. it mentioned in email preferences there is an option to check keeping the mails on server which can be checked - But it is not showing on my device.

I do not want server mails to be tampered with just in case of any issue with iPhone or mac book

Thanks for reaching out to Apple Support Communities. For your Mac, check your Mailbox Behaviors > Erase deleted messages and Trash Mailbox preferences as seen in this link:

Change Mailbox Behaviors preferences in Mail on Mac

You may also want to check the mailbox settings from the server side as well. IMAP accounts have some options that can affect what happens as well.
