Ever since I updated to 12.2 on my 2018 Mac mini and I keep getting Kernel panics, and restarting.
I've tried everything I can think of, reseting PRAM, reinstalling Monterey 12.2
I've even wiped the hard drive and installed Monterey 12.2 clean
I'm still getting kernel panics

Do you have a copy of 12.1? If so, turn off "Automatically keep My Mac up to date" in Software Update after installing.
You should try recovery to reinstall the system. In a Mac mini with Intel CPU hold down Command + R while restarting. With a M1 CPU shut down, then hold the startup button until you see the gear icon, click that for recovery.
For my second attempt, I started afresh. I erased/reformatted the usb drive, downloaded a fresh copy of Monterey from App Store and made the USB a bootable drive again.
Once, maybe it was a bad copy. Twice, looks like a habit
Maybe the best solution is to install12.1, cos it was working fine then and if that fails go back to Big Sur
Go to the Energy Saver preference and test it using the following settings.
Then select Sleep or Shutdown from the Apple Menu at the end of each day.

I have now a Mac mini that has been booted from a usb drive, the hard drive wiped and a fresh Monterey 12.2 installed.
I have not restored anything, its at factory settings with the basic apps that come with the OS, all I've done is to create my account.

I left my Mac mini on overnight on the settings you suggested and it was still on this morning.
It's strange that this is the first time since I started using Macs in 2003 to change the setting to force the computer to not go to sleep, but hey your suggestion works and that is good enough for me

As it turns out I have a 2020 MacBook Pro also on Monterey and wondered why I wasn't getting the problem
Turns out It was on 12.1, so took your cue and so turned off keeping my Mac up to date, so keeping it on 12.1

That is good news.
Not sure why it's so hit and miss from one Mac Mini to the next. My 2018 Mac Mini is running Monterey 12.2 as good as it did on Mojave when new, better even than Catalina or Big Sur which was the worst.

Open App Store, enter MacOS Monterey in Search. Find MacOS Monterey Utilities, click "View". Then click "Get". Let it run. Somehow you have a bad copy on that USB.
