How do you turn off the cellular data warning (network usage alert) that annoyingly pops up when I’m using data while meetings or calls.

That notification, Cellular Network Warninng, is generated the app that you may be using at the time of notification. Most often you can open that app and go to the Settings section to disable Cellular Data warning.
