How do you move the pencil options (eraser etc) out of the way so that the whole screen can be seen?

From the Pencil toolbar, tap the ellipsis button (“…”), then enable Auto Minimise:

Whilst this will not completely hide the toolbar from view, it’s the best that’s achievable.
