Why my phone not update

This is because your iPhone 6 Plus can only be updated up to iOS version 12.5.5 and you already have that installed. The iPhone 6 Plus does not have adequate hardware to run newer iOS versions. You will need a newer model iPhone to install and run iOS 15.
