If you're using third-party search engines, you'll get better results using Apple's terminology in the search bar, i.e. AssistiveTouch rather than Assistive Touch. But it's even better to search via Apple's Knowledge Base – which comes up with this from the iPhone User Guide:

Use AssistiveTouch on iPhone

"Device”. This option opens a submenu containing 6 additional menu choices. Can these be customized or not???"

Some tips related to AssistiveTouch...

• Its top level menu can be customized to run a shortcut. I've set mine up to turn off AssistiveTouch via a custom shortcut I created.

• Back Tap can also be configured to run a shortcut. I've set double Back Tap to toggle AssistiveTouch on & off via a custom shortcut I created.
