HomeKit turning light off randomly

Every day HomeKit keeps turning lights off between 5-8 randomly. Already tried uninstalling HomePod and getting rid of all automations and nothing, still does it.

It sounds like you've taken some great steps on your own so far. Have you also tried removing the HomeKit lighting accessory, then adding it to the Home app again? If not, doing so might help refresh the connection between your iOS device and the accessory.

Add a HomeKit accessory to the Home app


From there, let's be sure the iPhone is fully updated since fixes are included with each update. If an update is available, we suggest having a current backup to iCloud or to a computer, first.
