When I send a iMessage to someone it says that he read it (which is impossible because as soon as I send the message it says he read it… as if his phone is open on our conversation) but he didn’t get a notification of my message and he didn’t actually read it… how do I fix this? Is this a problem with my phone or his phone? We’re not having this issue with any other contact and this issue only started recently…

As a starting point, iMessage only shows that the message has been read when the conversation has been open.
You can check if your friend has muted your conversation, it may be the reason why he does not give any notifications when you write. But of course not the answer to why your messages are marked as read when he has not opened the message.

If your friend uses AirPods, then he may have turned on the feature that reads out messages automatically. But it requires that he has AirPods in his ears, so I do not think it can be that.
Have you tried to stand next to each other where you send a message and see it read immediately?
