Apple Event: May 7th at 7 am PT
Frequently, but not at all times, when I change the day/time of an event, (recurring or one time), the event moves back to the original day/date/time. Drag/drop or open and edit both fail. Even deleting some events. They move or delete and then pop back up.
This is not new to this OS version.

Safe Boot, (holding Shift key down at startup), does the problem occur in Safe Mode? Could take 10 minutes.
Safe mode attempts to repair Disks & clears lots of caches & loads safe Drivers, & prevents loading of 3rd party extensions, so if Safe Mode works try again in regular boot.

Try updating to macOS Monterey (the newest version)
My MBP is a tad too old - MacBook Pro: Early 2015 and later for the 12 series. My system will add 11.6.4 tonight.
This has occurred over numerous updates of OS 11.
