Mac mini dual screens

Today my second screen will not function. Perfect yesterday. It is simply not recognizing the dual screen.

Mac mini, macOS 10.15

I found that when running Catalina on my 2018 mini that sometimes the second monitor (connected via HDMI) would not wake up and be recognized whenever the power mode put the monitors to sleep. To fix, I would have to power cycle the second monitor (unplugging the HDMI connector and re-plugging it in also fixes the issue but that's more inconvenient than pressing the power button, and I'm lazy). Sometimes the monitor would wake up but just display a full screen of snow/static noise that you might see when an HDMI handshake authorization fails. Turning the monitor off and on fixes that issue as well (which would make sense as the handshake authorization would initiate on power up of the monitor.

I have since upgraded to Monterey and while the problem occurs much less frequently, it has still happened two or three times now. It only ever happens after OSX has put the monitors to sleep, so I assume it's something with the waking up of the HDMI port. My primary monitor connects via DisplayPort and is plugged into one of the Thunderbolt USB-C connection and has never had any issues.
