Is there any way to remove the small one line preview below a note? It makes it feel disorganized with the extra line.

I am not aware of any settings change that you can make that would prevent that from showing. If you wish to provide feedback to Apple regarding a change you would like to see, a change you didn’t like, or report a bug, then use the feedback link here, Feedback - iPhone - Apple
