Safari Tab Icons - Monterey

The icons that appear next to the website name in your tab within Safari, represent the website itself. This icon is controlled by the website provider and cannot be changed manually or turned off.

Perhaps we are misunderstanding what you're trying to do.

Are you referring to Safari > Preferences > Tabs > 'Automatically collapse tab tiles into icons'?

If it's something else, let us know and we will do more research to help out of course.
