I noticed in early December that my Sandisk Extreme SSD's (APFS formatted) are running abysmally slowly on my new M1 Max. Sandisk has no solution. Hoping for a software fix or a workaround.

You do not mention the interface or adapters involved...?
The transfer speed is going to be limited to the lowest common denominator.
Try a different drive with a native interface and compare your results

Backup disks you can use with Time Machine - Apple Support
Confirm your cable is compatible with the drive's max speed. Not all cables that fit and work will transmit at the max rate.
