A cable connection is preferred.
Unless you have a USB to USB (male / male) cable on both ends...you will not be able to connect to the USBC to USB adapter.
However, use a time Machine backup is the go to way. Most external drives still use a USB out—this will plug into the adapter.
The most trouble free way to move to a new machine, is using the Setup Assistant on the initial boot of a brand new machine— you have one shot here. Set up your MacBook Pro - Apple Support
The second best way is use the Migration Assistant.
