I've just installed the latest version of Monterey (12.2.1) and whenever I take a screenshot, it automatically redirects to the Mail app.
How can I fix this?

all you need to do is use "command-shift-5" to bring up the recording controls, click on "options" and choose a "save to" location other than "mail".

What do you ean by redirect?
Just what are you doing and exactly what happens?
What happens when you enter Shift plus Command plus 5? Does the screen shot menue come up?

Whenever I press Shift plus Command plus 5, the screenshot menu still pops up, but when I successfully take the screenshot, it automatically opens in the mail app (although I didn't set it as the default preview).
You can imagine it via the recording below.
