I am certain this used to be a feature of the mail app, but I can't figure out how to do it. I guess I get a lot more formatted mail and have renewed interest. Basically the idea is to se the Content-Type: text/plain part of a multi-part message rather than the text/html part.
Does anyone know if this is still an option?
There's no option to view an email as plain text. You can compose plain text emails.
I don't know if this is what you need but when the message is open try pressing these keys at the same time Option+Command+u

That's just going to show the raw source of the message, which I say is a step down from the html version.

I don't but I've primarily used webmail for a couple decades. 😎
