Assuming you mean with TimeMachine: Back up your Mac with Time Machine - Apple Support

You treat SSDs and HDDs the same when setting up.

IMHO

I personally don't recommend an external drive for booting. The internal NVMe SSD in the Mac is going to be faster than an external NVMe SSD Thunderbolt 3 attached to the computer or a USB 3.

IMHO

Keep the OS and core applications on your internal NVMe SSD drive.

Keep your data on an external drive, SATA SSD over USB is going to be cheaper than NVMe SSD, but not as fast.

and "Fast" is a relative word:

When a company advertises speeds of their drives these are under ideal, sometimes theoretical conditions, but don't translate to real world numbers

The other advantage to keeping your OS on the internal drive is if there is a problem with an external device not responding you can still boot your computer and pull the data from a backup. Which is key.

Here's how I would personally backup in you situation.

I have an internal SSD drive (~500GB for OS and Applications)

I have an external SSD drive (~1TB for documents, games, 3d model files, video edits, pics, etc.)

I would add a 4-6TB rotational drive for Time Machine backup both these drive and a cloud backup if thats feasible and in your budget.

Once Mac OS makes the initial backup of your computer (and it's not uncommon for that to take a day or two because of indexing) the subsequent backups happen very quickly and behind the scenes.

An SSD or rotational drive is going to make little difference if you need to restore a few files once in the while. And while I back up everything, Apps/OS,etc when I've had to restore data for a client I generally reinstall the OS manually, update the OS, install the apps, update the apps, then use the time machine backup for documents, bookmarks, notes. It saves hours of headaches and makes for a much quicker and stable restore

Again, this is all IMHO, I dont work for Apple, take my $0.02 as some dude on the internet.
