can I update to monterey without the update to mail?

I'm OK with the Monterey update on my iMac, but don't like the new Mail which makes it harder to sort mail by 'from' -- something I do hundreds of times a day. The sort feature was so easy in all the previous versions of mail. I would upgrade on my other Macs if I didn't have to lose that feature.

Mail is baked into the macOS— there is no stand alone Apple Mail.app


The current version in Monterey macOS 12.2.1 is Mail ver. 15
