Using the keyboard on the IPad 15.3.1
Often when I try to type, the “text scan” option comes up. I do not want to use this option nor do I know how to use it.

From your post it appears that you are having an issue with Live Text.
Live Text is a feature that recognizes text within photos and images. This allows you to copy this information for other uses. More information is available here: Use Live Text and Visual Look Up on your iPad - Apple Support
