My watch won't pair with my new Iphone. I reset my watch to erase everything since i don't have the old phone to unpair it. it tells me a software update is available and then takes me back to original screen. I'm stuck in thisloop and can't get out

I am trying to pair my apple watch to my new phone and it is so frustrating.

I don't have the original phone so I reset the watch.

I put my phone next to the watch and push start pairing. Then I choose setup for myself. Then I scan the watch face with my phone camera. Then it takes me to a screen that says

Software update is available for this apple watch. update now to continue setting up.

I select update now (other option is exit setup)

After this it just takes me back to the beginning screen. I've just been stuck in this loop and I can't get out.
