How do I change the color of the text for my iPhone's email from white to black and the background then to be white instead of black

Depending on exactly why your colors are inverted, there may be different solutions.

Try Settings>Accessiblity>Smart Invert>Off

Settings>Display & Brightness>Appearance>Light
