can I change the colour of my MacBook pro 16 space grey for the silver MacBook Pro? I am aware of the 14 day (no question) exchange policy but, I've had this MacBook for well over 14 days. is there anything I can do?

If you are past the 14-day window, your only recourse is to sell the Mac you have now and use the money to buy a computer that better meets your needs. A private sale might get a better price.
