If you have a third party SSD installed, then you will reinstall the original Apple SSD so you can update the system firmware with the Monterey installer. After the system firmware is up to date, then you can reinstall the third party SSD and install Monterey like normal. The Monterey installer will refuse to update the system firmware if there is not an original Apple SSD installed internally. I am not aware of any other way of updating the system firmware since Apple no longer supplies standalone system firmware updates as a separate download (and even then Apple likely would not allow the system update without an internal Apple drive).
