Changing mp3 files so that they appear in podcasts and not music

With iTunes becoming Music version 1.1.6.37 on Mac (Big Sur), I have not had success in being able to import podcasts that I have downloaded off websites (some older Dan Carlin stuff). The podcasts still appear in Music and when I right click and go to "get info" --> Options --> Media Type, the only thing present in the drop down is "Music". Anyone have a fix? I'd prefer it to be in the podcast app so when I push it to my iPhone, it appears there and I can mess with the playback speed.

No. It doesn't appear to be possible to move locally stored music files into the Podcasts app. You could potentially drag them into Books and treat them as audiobooks, but you would need to adjust any metadata first in music.
