My Mac is suddenly not showing Share by Mail as an option in the various menus throughout the OS. The word "Email" and the Mac Mail envelope icon have been replaced by a Chrome icon in the Extensions config menu in System Preferences.

To help isolate where this issue may be coming from, begin by creating a new, test user account on your Mac to see if the issue remains there. Be sure to fully sign out of your main account before signing in to the test admin account.

Thanks for the update. In that case, the next step will be to log back into your main user account and remove any login items, then restart normally, being sure to uncheck the option to "Reopen windows when logging back in".

If any issues remain after that has been done, you can uninstall Google Chrome, and see if that resolves the issue for you.

Since you only notice this behavior when Chrome is installed or when Chrome is in the list of login items, the best step would be to reach out to Google Chrome Help for additional guidance.

I tried to do it and the new user does not have that issue. Mail appears in the sharing options.
Any further advice?

I deleted Chrome, rebooted my mac and the Mail sharing option was restored!
Then I reinstalled Chrome... and the issue came back again!
