How do I pair my apple watch without updating it?

My apple watch was unpaired from my iPhone 7 and erased from my icloud account. I am trying to pair it to my new iPhone 11, but it keeps saying I cannot connect to the wifi to update it. I have done it in three places with very strong wifi connection. I don't know what to do.

Apple Watch set up Hello, I am trying to set up an apple watch that my dad previously used. I reset the settings on it and am trying to pair it to my phone (I don't have my dad's phone with me). Once I start to set up the pairing steps it says I need to update my watch and when I select to update it, it says it's not connected to the wifi, and thus it cant update it. I'm not sure how to connect my watch to wifi seeing that it's not paired to my phone and I don't have the old phone with me.

I have my daughters old apple watch. It tries to pair with my phone but says it needs an update but can’t since not connected to wifi. I can’t connect to wifi until it pairs, so what can I do? The older Apple watch was reset. It now tries to pair with my iPhone but says it needs an update first. I tried to update but I get message saying it’s not connected to the internet. However, there is no way to connect it to the internet until I can pair it. Is there a work around to updating the watch before it is paired? Thanks in advanced!
