All your Mail data is in the folder ~/Library/Mail. In Finder, press the option key and click Go in the menu. You'll find the Library folder there. Then just select the Mail subfolder from there.
One question, though: why not restore your whole Mac from Time Machine instead of trying to restore your Mail data?

MacBook Pro, mid-2012, SSD.
OS recently "failed"; Finder folder became unrecognizable. HD is original.
Connected it as 'target' on second computer and drive has passed all tests.
I tried to start from external Time Machine but recovery failed 3 times (that's 3 X 4 hrs.).
Reinitialized HD and reinstalled OS via Internet. Now, after updates, it's running Big Sur again.
But TM does not want to give... Although it does backup to the same folder on external (???)
So I try to manually recuperate as much old data as I can. Mail, Calendar, Notes ().

A - Please double check this information as this computer Does Not Qualify for Big Sur computer qualify for the upgrade to Big Sur.
