How do I remove a colored tag on my new iMac?
Control (right) click on the file in Finder
click on the checked tag
click the X on the tag

This even works to remove custom name tags in a specific color… but only on Monterey.
This control+document click does not work in Big Sur 11.6.5 to remove tags, and one must click the Tags… menu item, and on that panel, click behind the tag lozenge and backspace, then press return to remove the tag(s).
Highlight the tag (may have to double click) then select "delete"
Yea' figured I was OK going that route because the OP has a new iMac.
