Is there any other way to disable Adaptive Sync except on the monitor controls?

That's not true.
First of all, it's possible to disable Adaptive Sync in both nvidia and AMD drivers on other platforms.
Additionally, Apple themselves are saying there should be an option:
Use an Adaptive Sync external display with your Mac - Apple Support
That is an LG feature, not something that macOS can disable.
Are you referring to Freesync®? Can you disable this in the LG monitor controls?
I want to disable it in the OS, not on the monitor, since I have multiple devices connected.
If you have followed the specific connectivity steps in that article and still cannot disable Adaptive Sync, then the caveat may be on other platforms.
What an incredibly wrong view to have.
If every platform supports the option except one then the one which doesn't support it is the one who has it wrong.
