Notes and Apple Pencil

I have started using my apple pencil in notes for writing short stories. I like the handwritten look and things were going smoothly until I stopped writing. When I resumed writing, notes began to convert my writing to text, which I don't want. I could not get it to stop converting to text. I tried the settings to no avail. I even restarted my iPad and that fixed nothing. How can I disable the text conversion in notes?
