Mac mini M1

Thinking of upgrading my old mac mini to M1. I have my operating system on a bootable SSHD to make it run faster. Can I still boot and use all the installed apps on the new M1 Mac mini?

No sorry, the new M1 Mac's including the Mac Mini, will only be able to run macOS Monterey or later and you will need to update your older software accordingly.
