If I move a mail message from inbox to junk folder, dose that automatically block the sender? I have an iPhone 11 Max Pro and a MacBook Pro. I use a gmail account and an imap(?) mail servers.

It does not block the sender it only filters it out, next time a mail from the same sender will move the email automatically to the junk folder.
