All new systems, software and hardware, go through periods of growing pains. That's one reason they allow for easy periodic updates. If you look long enough, you'll find pros and cons on just about everything out there. Nobody can tell you with any real confidence you will or will not have problems. The best you can do is read the reviews and know what to do in the event of problems.
It's a personal choice and what you do depends on your risk tolerance.
As to RAM, always buy the most you can afford. My somewhat limited, mostly indirect experience, with Adobe is get at least 16 GB. But to future proof your system, buy more than the bare minimum you need and understand that what you buy is all you'll ever have in today's Macs.
