How can I stop the voice that speaks the name of the letter I am adding. for example if I touch the "a" key the voice says "alpha", or "bravo" for a "b", etc. very irritating

On your iPhone, tap on:
Settings > Accessibility > Typing Feedback
and turn "Chararcters" off.
On your iPhone, tap on:
Settings > Accessibility > Typing Feedback
and turn "Chararcters" off.
Go to -> Settings -> Accessibility -> Speak Auto-Text -> Off.
