If the iPhone is displaying connect to iTunes, then have him connect the phone to a computer with the latest version of iTunes or if a Mac with Catalina or above to Finder. Follow the instructions here. If you see the Restore screen on your iPhone, iPad, or iPod touch - Apple Support

If you didn't wipe the device before you gave it to him, he is going to have to wipe it anyway when connected to iTunes. He can do that on his computer, he just needs to download iTunes. He will have to create an Apple ID if he doesn't already have one. How to create a new Apple ID - Apple Support and then after connecting the phone to iTunes, he will need to restore it. If you see the Restore screen on your iPhone, iPad, or iPod touch - Apple Support You will probably need to follow the steps here if you did not wipe it completely. What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support

This will let him set the phone up for himself.

Yes it is displaying connect to iTunes. I suppose my next question is he never had iTunes so do I connect it to my iTunes and if so does that give him access to my information? Or is it just needs to connect to iTunes and he makes up his own passwords through my accounts. There is just personal information (banking) which is sensitive information as I’m sure u understand is confidential
