Before I investigate further ... I have a Mac mini (> 2018) using a non-Apple display and an iPad Pro, both updated to latest software. Should I expect Universal Control to work in this setup?

It works with 3rd-party external displays on MacBook Pros and iMacs. I believe it should work with a Mac mini.
