Possibly, assuming it is running the latest firmware. Changes were made in iOS 15.4 which should make it easier to use HomePods on what are sometimes called captive networks. See Use your HomePod on an 802.1X Wi-Fi network - Apple Support for details.

As noted in the article, if you see that message then HomePod stereo pair, Personal Requests, timers, HomePod as intercom, and home theater audio with HomePod and Apple TV are all unlikely to work. Presumably direct playback of an iCloud Music Library with Siri should work, but AirPlay might be compromised too. You may also have to configure HomePod to allow playback by Everyone (e.g. with an additional passcode) but that might be something you would have had to set up before you got on the hotel's network.


Specifically stereo pair is only going to work if you have peer to peer connectivity so that each of the devices you own can talk to each other over the local network. You may be able to get a wireless travel router that can connect to a hotel's Wi-Fi, but then allows your own devices all to connect to each other locally while using the hotel Wi-Fi for any Internet traffic.
