Apple Support provides a good document for resetting an iPad before selling it/trading it in.
What to do before you sell, give away, or trade in your iPhone, iPad, or iPod touch - Apple Support
If you are having issues getting through steps 1-8 under "Remove your personal information from your old device", try rebooting the device. Also be sure to have it connected to the Internet as you perform these steps.
