The Rename option is missing from the drop-down list in Bluetooth Devices. With several mystery devices that have code names of some sort in my list, I cannot tell what's what.

It is in the Bluetooth Preferences panel as shown below via a right-click or two-finger tap, and as was already mentioned, only if supported by the device manufacturer. Those Sony XM4 headphones in the image below, don't have a Rename feature on the secondary menu:

Which means whatever the bluetooth device is, does not support name changing. Again, the bluetooth device manufacturer needs to support the feature for the rename option to appear there.
The renaming option for bluetooth devices depends on the device manufacturer. They must support that feature for it be available.
