Airplane mode should stop incoming phone calls, it is supposed to turn off all radios however you may notice when you tap it that is leaves WiFi and Bluetooth turned on. If you have WiFi Calling turned on then when someone calls you it uses that route to deliver the call. While you are in Control Center after activating airplane mode tap on WiFi to temporarily turn it off. Or skip Airplane mode and tap the cellular antenna and WiFi to temporarily turn them off until tomorrow. You will then be free to record without any interruptions.

Yes, either both would have to be turned off or you could disable WiFi calling.
From my experience, "accept calls from favorites" is ON by default so your friends will still disturb you if you don't turn it off.
You really need to explore it, spend as much time looking at the settings as you spent typing here and you would find out.
As I said, Use Do not Disturb in Settings, Focus to control what you receive and from whom.
Tap on the People section and check options like accept calls from favorites is as you want it
Turn off Time Sensitive in Apps section

When you turn back on WiFi and Cellular, yes.
I think it did once block calls and texts.
So when record is on, if a call or text comes in, it stops the recording, even if you don't answer, and it does not resume after the text or call stops coming through.
How can you stop texts or calls from doing this. Previously, airport mode worked. When airport mode was turned off, the texts and calls would be there.

Will just clicking do not disturb work - does it by default stop all texts and calls from interrupting something like recording? or do you have to specify other things in focus?

Would it work to just click Do Not Disturb in Focus? If so, do the other settings there have to be adjusted? I'm not able to experiment to try this.

My question is If you don't specify more settings in Do Not Disturb, will it by default have no time or people parameters and block all? This question is not clear by your links.
