If I put an email into a folder on the desktop I can't see them on my IPAD or IPHONE. The folders or emails are just not there. So I need to somehow sync them to allow access when away from my MAC desktop.

As soon as you save emails to. folder on the Mac desktop they are taken out of circulation as far as other devices are concerned.
You need to create a folder inside the email account.

Are you adding a Folder to the email account or doing anything else?
