how do i force itunes to leave a gap between songs when shuffling

When laying songs from a playlist some songs do not have a built in silence at the beginning and end of the rack. iTunes rills right from one to the other and it is annoying and unmusical.

Short of editing every music file and appending a couple seconds, is there a way to et a gap?

No, you cannot add a gap. You might try enabling crossfade to see if that makes the transitions easier on the ear. See Fade between songs in Music on Mac - Apple Support.
