Quicktime won't show the Apple Menu Bar at the top when recording??

So I just rehearsed and created about a 20-minute training screen recording using Quicktime, with the movie selection area set to include the Apple (Finder) menu at the top. Thought I was done, but I just now discovered the Quicktime playback doesn't show that top bar. I tried both full screen and selected portion. I'm on Mac OS 10.15.7. The top Apple menu bar is crucial to my video. What is wrong? Thanks.

Figured this out... if my cursor is simply sitting on the screen on top of the playback window during the playback, the Menu Bar within the playback does not show. I'm not talking about clicking on anything, just where my cursor is arbitrarily resting on the screen. Weird.

Now if we could just convince Apple to re-include the basic pause-while-recording button...
