My Q- If this is so, why do I still find all my data files when I search Folders in the HD Icon on my Desktop? Yet, that HD is seen as the first HD (with System files only) in Disk Utility per the quote from the Apple article above.
The Desktop icon "presents as" Macintosh HD in reality it is your " Macintosh HD- Data" as well.
this is normal..
it is designed to make it less confusing...not more confusing simplifying the interaction...
You can see from the Terminal.app all Volumes, copy and paste:
diskutil list internal

the Desktop icon is a bit of a throw back, a nod to older operating system for nostalgic reason—it does not have to be there taking up valuable screen real estate. You can remove it from the Desktop
