When I try to type in my email address (this happens everywhere, not just Safari and mail), my Mac auto-completes the first part of the email address. How do I get rid of that?? Causing my endless problems.

There wasn't anything there, so I added something to "replace" the text: e.g. "lorem" -> "lorem". It's only a partial fix, though. It also capitalizes the first letter, so I have had to disable auto-capitalization. Fixes that problem, but now I don't have auto-capitalization for anything else. Apple needs to have a feature to disable specific auto-completions.
Try checking System Prefs>Keyboard>Text and see if there is an entry there.
