I'm interested in upgrading the memory of my late 2020 MBA from 8GB to 16GB. Is that something that I can have done at my local Apple store? How long does it usually take? And, last but not least, how much will it cost?

As tjk says RAM is integrated on M1 chip, you can't upgrade RAM on your MacBook Air unless if you could replace M1 chip which has more RAM on it.
Also, FWIW, no MacBook Air ever had upgradable RAM.
